Behind The Scenes of the Shibuya Crunch

Every bowl at Freshlings has a story, but this one literally grew in the middle of the city.

We call it Shibuya Crunch, a salad that began as an idea inside a quiet greenhouse surrounded by concrete and then on our menu board.

The hero ingredient? Japanese Rock Melon, grown not in distant farmlands but right here in an urban hydroponic farm in Chennai where technology and nature share a rhythm of their own. Watch the video below:

The farmer growing these melons for us has perfected the balance between science and soil-less farming. Neat rows of vines hang suspended on trellises, soaking in filtered light and clean water. No soil, no pesticides, just precision and care. The sweetness of the melon? All natural, a result of controlled nutrition and microclimate, the same way you’d expect it in a Japanese prefecture, only this is Chennai.

From the greenhouse, the melons travel directly to our Freshlings kitchen where they’re sliced, paired with feta, pickled onions, pomegranate, radish, white beans, and that signature super crunch (a mix of toasted sesame, pumpkin seeds, and cranberries). Finally, a bright Citrus Drizzle ties it all together, clean, zesty, and a nod to Japan’s balance of simplicity and flavor. This newly crafted creation, inspired by the vibrant streets of Tokyo’s Shibuya district, celebrates freshness, balance, and texture in every bite.  The result is a salad that’s as much about place as it is about taste. A bridge between the local and the global, between a farmer’s quiet craft and your city plate.
